The course has the following aims in relation to knowledge and skills to be achieved by the student: i) to know the importance of viscoelasticity and how the strain is modified under shear and extensional stresses; ii) to know the parameters involved in the rheological functions of fluids, particularly in polymer systems; iii) to understand the rehological behaviour of multiphase systems (suspensions, emulsions, polymer mixtures) of chemical, food and cosmetic interest, among others, iv) to know the experimental equipment and advanced hybrid techniques for the determination of structural-rheological processes, and v) to measure experimentally of rheological properties of different kinds of fluids.
The course will combine the mechanical fundamentals with practical applications in the engineering field by means of the study of cases and problems.
a. Lectures.
Theme 1. Importance of the rheology in the industry. Mathematical fundamentals of the strain and flow of fluids. Viscoelasticity: solids and liquids. Texture. Newtonian and non-Newtonian fluids. Apparent viscosity. (2 h)
Theme 2. Non-Newtonian fluids. Classification. Inelastic and dependent time fluids. Modelling. (2 h)
Theme 3. Viscoelastic fluids. Loss and storage moduli. Complex viscosity. Mechanical models. SAOS and LAOS. Extensional viscosity. (6 h)
Theme 4. Rheology of biopolymer systems. Effects of shear rate, temperature (sol-gel transitions), pressure, concentration, molecular structure, average and distribution molecular size. Industrial examples. (7 h)
Theme 5. Equipment for experimental determination of viscosimetric, rheological and textural properties. Types of viscometers. Rheometres. Texturometers. (1 h)

Actividad 2. Lab practices in the Research Group (GI-1618) installations.
- Description of equipment for the determination of viscosity and acquisition of techniques. Determination of viscosities of Newtonian solutions. Influence of temperature and concentration (2 h)
- Description of the rheometer, experimental techniques and software Determination of viscoelastic behaviour. Loss and storage moduli determination. (4 h)
- Description of texturometer and methodology. Assays of compression. Determination of elasticity modulus and stress. (2 h)
The group titorial (1 h) will be employed in the oral presentation of the results acquired during the lab practice from the development of report in scientific paper format.

The lectures will be developed orally, with the support of digital presentations. The interactive classes corresponding to the resolution of practical problems will be developed on a blackboard in the classroom, paying great attention to the speed and pace of presentation and interaction with the students, highlighting the scientific and technical aspects, both in relation to calculation and applications. The lab sessions will be carried out following the protocol established previously of each practice and with the greatest possible detail regarding the handling of equipment and experimental techniques. Viscometric and rheological measurement equipment has basic operating manuals available to students.
On the first day of class, all the necessary teaching material will be available to students (subject program, subject contents, problem bulletin, assignments, practice scripts, etc.) on the course of campus virtual.
Attendance at practices is mandatory.

Laboratory: Description of the texturometer and methodology. Compression fracture tests. Evaluation of modulus of elasticity and breaking stress. (2 h)
Student learning will be monitored through activities (CN02), work (including presentation in class) (CN02, HD09) or solving problem individually and/or in groups (CP02, HD04). The lab practices will be graded based on the evaluation of the practices report and their oral defense (CP02, HD04). Students will also take a problem-solving exam (CN02, CP02, HD09).
The only requirement is that the practices have been carried out and passed before the exam. Any grade obtained during the course and evaluable in the first opportunity of each call, will be kept, if applicable, in the second opportunity.

Student learning will be monitored by completing problems and activities individually and/or in groups. In addition, students will take a problem-solving exam that, together with the laboratory report, will allow them to individualize the final grade.
To pass it is necessary to obtain at least a total of 5 points and 3/10 in each of the parts of the evaluation, except in the Tutorials/teacher's report sections.
In the recovery opportunity, the accumulated score of the continuous evaluation is maintained.
In additional calls, the student will be able to use the grades from the continuous evaluation and if the practices are not suspended, they will not have to repeat them.
In cases of fraudulent completion of exercises or tests, the regulations for evaluating students' academic performance and reviewing grades will apply.
